A rifle which did that would conceivably be brutal early on -- in particular, there are pod people sometimes that you can shoot without even triggering combat mode if they're far enough away, and they'd effectively become one-hit kills.
But a knife? If you're in melee range, you need them to die quickly, not slowly bleed to death over a long time period in which they're still able to readily attack you.
Yeah the knife itself isn't very useful at all.. it may be ok when you're fighting raiders with 10 health near the citadel encounters.
How dare you bust the myth that AR's are the only weapon to use! That's just rude! ;)
That's how I was using it for my combat-surgeon (a fitting "tool" for him, I think). It was particularly amusing against the honey badgers. They wanna play slicey-dicey, okay, we can play slicey-dicey!
