1. Don't bother going into melee range until step 2.
2. Parry when he's using charge attack.
3. Crit hit it & dodge everything else (most of the time you will only dodge his swing anyway).
4. Play waiting game.
5. Use shield to tank the thunder lunge (once per life atk?) & just heal.
That's literally the very bare min i could think of.
for his ultimate attack, just swap to the shield and guard or you can parry it with eureka for style which i did
overall solid boss, love its design.
Others have already pointed out the strategies for beating him more efficiently so I won't repeat them. I'm just saying he's incredibly fair in reality but he's also where the game takes off the kid gloves. And as you said you're a casual gamer, there's nothing wrong with that but if you're going to take on a decently hard game you should probably expect you're going to come across something that's going to test your skills.
There's no shame in struggling with him but it definitely should serve as a sign that you either need to be prepared to work on your muscle memory and knowledge of the game before you hit some of the real walls that are far harder than the Cleansing Knight or just put the game down. (I mean fighting Ursula is like fighting seven Cleansing Knights at once. She requires super fast reactions, good pattern recognition and is super aggressive and in your face at all times. And sure she's optional if you really want to pass her by but Loskid and Eunomia aren't.)
if you struggle, equip your heaviest armor and helmet before boss fight, equip more physical & boss attacks's elemental resist seals before the fight. Increased health helps to.
Use more your weapon skill & spells. You didn't use any in this fight.
You can parry his energy attacks (except for the left to right beam swipe) And maybe the big atatck at 50% health ? I didn't manage to parry it, even with good timing, Maybe my timing was wrong, but it seems I got ht by AOE before being able to parry the attack itself
This is effective. In fact it might be TOO effective against like 90% of the games enemies but that's a discussion for elsewhere. But my one reason for not just dropping this strat and leaving is because OP mentioned that they're more of a casual player. And even as a long-time souls-like player who has even beaten Lies of P (what I consider to be the most parry heavy souls-like) my timing is still all over the place when it comes to parries. Sure, you later get a thing for your seal that makes you able to spam the parry button to little detriment. But since OP identified as a casual gamer I figured jumping straight to "parry 25 attacks in a row without getting hit once" wasn't a very helpful comment.
Parry, parry, parry, parry, dodge, parry, end.
I know, it's not easy, but trust me, it can be done.
