parry into a finisher seems to be the biggest chunk of sync % gain and thusly, should be your priority in fights.
engage, bait out hit, parry. finisher. spell.

this game is very tough mechanically speaking imo. everything dodges and flips about. the bosses tend to read your fighting style as well, so don't get too comfy with one method, i found a boss tracking which way i liked to dodge (left and right) in order to track and hit me with a 2nd hit in the combo. almost as if it was pre-planning that i would dodge the first hit.

die 'x' times while trying to get the boss parry timing right --> parry & crit hit it to death.
since the crit hit give a lot of sync, you can also set the spell to that -60% sync to heal.
on first try don't try to kill him. Just dodge and read his action animation time.
Then you will get a idea at what time to parry.
Then try parring his attacks. That's it easy kill
