how do i add a 5th class to the ct or t menu

Sorry ? you mean preset loadout of weapons ? You can't, there is only 4 slot in the buy menu in Counter-Strike Source.

but of couse there would be a way through modding to get the result i desire

Of course yes but mods is a modification of the game, so don't allowed on Source. If you modify any source code files, you will be VAC banned. You can only do plugins, which are not a mod, or use "custom" folder to add some customizations. Just remember that if you want to modify the game, you can't but plugins is extension, not a modification so allowed ;)
