on creatures each stat has a hidden value, the total of those values = the creatures level.
and those individual stat values have a multiplier for each that then gives the creature the total health/stam/o2 .. value we see in the inventory/stats page.
Some Tek items will show you the stats as will most cryopod and spyglass mods.
when taming take a screenshot of the creatures values and there is a calculator online that will figure out the base stats before taming, but after taming the calculator will not work.
for example i am breeding a cat base level 328.
Hp 51 stam 47 O2 43 Food 51 Wt 60 Att 53+22 + Lvl 1 =328 at birth.
and saving up traits to put on the final mutation.

I hope ive not said this in a confusing way.
**edit, the Att 53+22 is from 11 mutations on the attack stat, each 1 mutation is 2 points and also 2 base levels at birth.
In the case of my cat the base 51 points in the food stat is around 8500 food value.
**edit, Fatty 1 might give 5.1 extra armor on my cats.
Also, if you have the bobs tall tales dlc the gene scanner will tell you what the stats are on the baby of non-egg laying tamed creatures (while pregnant).
