Official Modded Ab, to me, is probably the most unique. It's a low pop and the solo players are actually pretty chill (mega tribes besides Hyrule are still pretty shady. Inflatables are cool too, and Reaper Knights help everyone get pregnant, etc). The only weird thing is the xiphactinus mod specifically makes all the blue zone aquatic life non-aggro, minus eels and baryonyx, jellyfish, leeches. It's that one specifically, because I tested it by shutting off the aquatic aggro on my single player file too, by only adding that mod.
Pretty much all servers will have shiny dinos, and they do have some special qualities (shiny doedicurus for example will farm stone to its max weight, instead of half, and there are other unique qualities other species have, as well).
You can also make moro raptors and moro rexes, which I don't really care for, but it means transferring to another modded map and downing bosses pretty fast / simple, especially if you already know the map and where to get tributes.
Those are the biggest differences. The best thing though is actually just being able to use clear glass skins, or juggle clean tile with obsidian tile to make a checkerboard, or dwarven ruins with those skins, etc. It lets you spread out more themes over your bases, make underwater aquarium themed breeding areas for aquatic life, etc.
Edit: Capes and cliffans wardrobe are also significant early additions. You can push your temp resist within just a tier below the higher one, or eliminate hot / cold in the right armor sets. Ascended flak will still drop your temp resist a lot though. The Cliffan's wardrobe is basically a storage vault for the simple cost of hide and wood. You get it at like level 2 and it is incredible for storing things early, when you have no weight to do large-scale resource transporting, just yet.
I can't remember the name of it, but there is also a dino around the size of a t rex, that drops adrenal glands, and is tied to an additional "boss encounter" where you fight an amped version of the species. Deinonychus are also on some maps like scorched earth, and they give a climbing / traversal option much earlier on a lot of maps, in addition to being able to make the best kibble in the game without near as much grinding and prep work.
Someone will probably post the Wiki, but they won't know what mods actually harm things like aggro on the map, as in Ab's unique case, for example. Players on official, even modded, take themselves super uncomfortably serious, and they will not acknowledge any mod that makes the game easier, or breaks it. Only weird thing about them.
