Saving by hitting esc and clicking save just means if you crash but saved only a few minutes before, you don't lose as much progress.
I think Servers have automatic backups but not single player (I am pretty sure ASM in Survival Evolved had backups at least).
In that folder there is several folders, some are settings for the game and other things.
In SavedArksLocal is the save for the map.
If you want to make a backup either copy the entire Saved folder or just the SavedArksLocal folder or rather TheIsland_WP should be enough and paste the copy somewhere else. Then you can replace the folder with the backup if you need to play earlier (for example if you want to try to fight a boss and you end up wiping and you want to go back before the fight).
You can also have multiple saves like this, for example one with mods and one without or one on hard and one on easy.
Thanks for taking the time to do this, I will certainly look to use the information in future ;-)
