this feature is automatically enabled which it automatically create the dye for you.
To turn this feature off, go to you're cooking pot click on it and just above (Light Fire) there should be option for (Disable auto craft) click that and it should stop making white Dye and you will free to make whatever dyes you want.

I seem to have an issue only with the white paint, every other colour I've tried seems to work but the white does not. I've mainly been using paint brush on building parts to test this.
When you do the armour are you using the cosmetic menu? if you click on inventory then the cosmetic tab things like tools and armour can be painted there.
It's just that everything's default color is "White".
It's essentially the same as using Soap for most things.
