Maybe it is only the surface temps you're seeing if that happens right after you exit the pits.
Try to do 1 to 2 laps before pushing through the corners at the limit, so the pressures rise up nearer optimal levels.
It is like this in real life (more or less), as the category doesn't allow tyre blankets.
About the bumping....you shouldn't touch another car at all. The speeds are very high and in real life you can see them losing control for the minimal of interactions sometimes.
Best way to get along it is practicing and practicing until you have confidence on the tyres. Never touch another car.

I've seen more than plenty from a rear contact. Also quite a bit of professional drivers losing control by themselves, let alone with a rear contact messing up the car balance.

This is not rF2. I disagree on too easy to lose grip. One of the things that made me like LMU is the ability to lean on the tyres on fast corners. I find ACC more slidey, even.
yes some gt3s on fixed set ups will get very hot tires dependent on driving style and track and as ive only done fixed set up i cant say if increasing tire pressure is some thing you can do to counter this but looking after tyres is a skill needed even in sprint races.. the BMW is really effected by this is its quite an over steery car any way and theres an optimal temp window where it drives really well but under or to much over and it turns in to a boat
