I've yet to find any trainer that goes all the way to 50, I feel that will need some changing in future patches, so I think you can safely get some crafting skills without worrying. I usually do some tailoring since most NPC tailors are lacking some good mid tier recipes while I've encountered very good armour and weapon smith NPCs in dwarven cities.
For example, you can change max potential (and many other things) just by editing \Soulash 2\data\mods\core_2\character.json.
Switching:
It's all in plain text, and pretty much self explanatory at that.
And even if new update override your file, your character will still work without any issues.
The game already have three different modes. I feel like it makes sense for them to be the three 'main' archetypes, but have an additional option where we can customize each of the difficulty options and have max potential be one of the options.
