How to Die Less
Got a few tips that I found helpful after playing a couple of hours:

• I find the best strategy to beat the game is to use a long weapon that's slashing or bludgeoning. I haven't found a consistent way to use spears, but your mileage may vary. The scythe weapon the 1st boss drops can easily carry you into the 3rd boss. Tap right click to enter block mode with a 2-handed weapon, hold left click to move your weapon to force distance away from enemies, and move the mouse to use the deadly end to swipe away weapons before striking people in the face, torso, or arms.

• If you can't pick up a 2 handed weapon you're comfortable with, grab some sort of shield and your preferred 1 handed weapon. A stool and barrel lid work as shields in a pinch (though you can't stow them).

• You regenerate health slowly, but not limbs. It's basically game over if you somehow survive losing a limb.

• Pick up shields. Stow them and hold a few backup weapons in case you get hit badly and drop your main weapon.

• Be aware drawing a sword out of it's scabbard takes time. Sometimes, it takes several attempts. I've stumbled several times trying to get a sword out of the sheathe. I don't recommend using one in a pinch for this reason.

• Consider fleeing most of your fights until you get armor that's good for the zone. If you must fight to pick up better gear, try to fight to main the enemy. You get less points that way, and that lets you play the zone longer. You would want this to get more chances to get better armor. A safe, long-term strategy to fight is to aim for enemy hands and strike them a few times if your weapon is longer. As soon as they start to lose composure and stumble or drop their weapon, that is your cue to finish them.

Concerning enemies:

• It's good to play around tables and other furniture, especially when you're facing multiple enemies. You get even more value out of this if you're using a long weapon.

Daggers enemies are absolutely deadly early game. I do not recommend fighting them unless you have a long candlestick or are good with the pitchfork. Concuss and execute them with the long candlestick or poke them before they poke you with a pitchfork. If they close the distance, you are pretty much dead.

Spear enemies are always going to be dangerous. They always seem to find a way to get into the cracks of your armor. I've died several times instantly against them with decent metal chest, head, and neck armor. Always respect the spear enemy. If you must fight them, swipe away their spear before closing the distance. When I close the distance, I usually concuss them by hitting them in the head with the short end of my long weapon several times. By then, they'll usually start to fall to the ground. There, it's easy to execute them. Finish them or run when you see them. Do not hesitate.

• The end game is going to require a long maul-like weapon due to heavily armored enemies. Most end game fights are going to end up concussing several enemies before executing them. Expect to run a lot and hope for good RNG to complete a decent set of armor.

I find to fight spears properly you either need a shield or a weapon of similar length, they like to hold the spear point right at your face. Using a weapon to block ain't the best unless you have ultra instinct.

or just use the Triple Pavis Pulverizer technique

The strategy I found was to find a mid range weapon (Halberd, battle axe, hoe, etc) and hold it in your left hand then find a long range weapon (Not the scythe, it is worthless when one-handing.) and hold it in your right, if done correctly, you should be able to just flail at your enemies until they die, run off or surrender, certainly not a fun way to play the game, but the most "consistent" strategy I've been able to find, if not by much.
