I dont think you can? Im aware that there is a mod menu / test area / trainer mod you can get off of nexus, but other than that you'd have to wait for an update or something.

if you go into the settings/options area in the menu then go to the game section then im pretty sure there is a whole bunch of stuff you can play around with, including invincibility

You can't turn on invincibility that I know of, but you make it so you take practically not damage. You can go into settings, select game, and turn down enemy damage to the lowest.
You can still die, but its muuuuuch harder.

you cant get invincibility it just reduces damage to player a lot but u can still die easily from a spear or penetration
