you can use a barrel lid as shield, or close the distance quick so you get past the blade of the scythe, both are somewhat risky

3rd option along these other 2 (and my go-to) is just baiting his swing first, which like you said is usually a two swing motion. just get close enough to make him lunge and try to keep your weapon at whatever you think he's aiming for. I'll veer off to his sides and do a big circle if I have to dodge

Just run into him with a knife or pitch fork and stab him in the arms or chest, the chest will make him fall over and the arms will make him either drop the scythe and reach for his weaker, smaller dual sickles, or it will break his arms and cripple him.

I like to run at him with two knives. In fact. it works pretty well against most enemies up to scythe man.

dont long range fight him he has the longest hit at that level rush him with axes and just chop him or push him dont and just keep him down
