the inventory is an extension of the default holster mechanic. holstering a weapon, say, an axe, with E results in the axe being placed on your hip. if you wanted to grab your sword, in a different place on your hip, you'd have to take out the axe and drop it first. with the inventory, R, you can grab things with more "precision".
tl;dr, its the same as unholstering, but you click rather than hold E
