About the anime and movies
I've read Tsukihime, but idk nothing about Fate outside of the basic. Do I need to watch Fate SN, UBW and Zero (I know I know, you don't start from Zero so I want to start with SN because that's the first VN that was released and Zero is more like an "extra" or "spin off") to understand the Heaven's Feel movies? I want to watch them because I'm only interested on Sakura route. Or is there content that I will miss from her route if I don't play her routes in the original and the remastered?

You kind of have to know about the fate route, and the ubw route in order to understand Heaven's Feel. Both the movies and the novel expect you to have. There is stuff that just straight up will not make sense if you do not have the knowledge of both routes going into Heaven's feel. And honestly, don't bother watching the movies if you really want to understand Heaven's Feel. Ufotable decided to make cool fight scenes instead of adapting the character moments, explaining the plot, and other things.

Honestly the anime's are a pretty bad way to experience Fate. You can start with the Fate Stay Night anime made by DEAN, but it mixes in bits from ubw and Heavens Feel and can actually spoil plot points from them. UBW by UFOtable is okay, but again they were focused on making cool looking fights. They get most of the events down but none of the mc's internal monologue which is part of what makes Fate so compelling. Same issue with DEAN's fate route on top of everything else.

If you really want to understand Fate Stay Night, the visual novel is your best bet. The anime has no good starting position and somewhat expects to start from Zero which is a terrible idea, do not do it, it will spoil 90% of Fate Stay Night.

The anime series made are a bad representation of the story. Fate/Stay Night, the visual novel is a complete package for a reason. It's structured pretty deliberately. The 3 routes it consistent out of can only be read in a specific order, because they build up on each other and subvert ideas established in the previous route(s). Only when you finish a route does the next one become accessible. The order is Fate -> Unlimited Blade Work -> Heaven's Feel.

You've the correct idea about not starting with Fate/Zero, because even though it re-explains some stuff from F/SN it also expect you to have read it beforehand. Things which are big reveals in F/SN are treated as an afterthought in Zero. It's also build around knowing how the 4th Holy Grail War will end, which you learn in F/SN and utilizes it to great effect.

If I read the VNs, should I read the OG or remastered is ok? I don't complain about sexual content at all, and I don't want to miss content so if there's something Remastered doesn't have that OG does I want to know.

I would go with the Fate/Stay Night [Realta Nua] - Ultimate Edition. It's the most complete version. It's based on the original PC version with the Realta Nua (PS2 & PSVita) additions added. The overall translation is worse, but it keeps some of the darker elements from Heaven's Feel which had to be toned down for the PS2 release. It also offers the option to include the original erotic scenes or go for the replacement scenes. Both work well for the story.

Depends what you want, if you want to see the darker content for Heaven's Feel, the route you are interested in, then the ultimate fan patched edition, that Chaos_Alfa reccomended is the best bet.

If you don't mind losing some of the darker elements for the ultimate edition, you will get a much cleaner translation, and some cleaned up visuals. If English is not your first language, the remastered has English, Japanese, and simplified Chinese.

The fan patched version is pretty easy to set up and can be done in a few hours.
