The things that were censored were the sex scene/mana transfer. Sex was basically a way to transfer mana. They changed it to have other ways to transfer mana. They also took out some things such as a certain character sucking a certain cylindrical object, is now sucking some blood from a finger.

In terms of the fate route and ubw, there's very little your missing, you can look up the cgs if you want. Speaking as someone who viewed both, the writing for the sex was pretty awful. Some scenes of sexual violence were also taken out in the last route. If you wanna see these things, download and play the fan patched version. Keep in mind the translation is different, as is the UI i believe.

For the Fate and UBW routes, yes since the sex scenes only exist for mana transfer and do not affect the story as much. I didn't read the censored version, but I did hear that the HF route gets done dirty, not just from the removal of sex scenes, but the removal of any NSFW dialogue. It's less for appealing to the down bad part of the fandom and more for touching upon darker subjects. Of course, like I said, I only heard about this and did not read Realta Nua/Remaster, only the original. For all I know, the HF route could still be enjoyable. So take that how you will.
