Stay Night because when Shirou and Saber is about to confront Gilgamesh and Kirei, they know Saber will disappear even if they win. Saber does, in fact, disappear when the sun rises after their battle. And Shirou says that he doesn't want the nights they spent to end (aka he wants that night to stay). It's primarily related to the first route but the elements are in the other rotues too. Such as Shirou "staying the night" with the heroines in their respective routes (he had sex with them in the original). And even if was the neo pronouns, I remind you, this was made in 2004.
