Plenty of younger people never played the original or fan translations
You talk as if time stands still and there isn't a new audience generation to sell this to.
Some people actually do care about supporting creators. Especially since I don’t really like Gacha but love Fate.
There is no patch because this release is based on fate stay realta nua, there was never any H scenes in that version to begin with
The original 2004 H scene PC release was not voiced.
The voiced realta nua version (i.e. this verison) has a lot of seiyuu's in it that don't do eroge work, so there was never any chance they would voice the H scenes to begin with, hence why they were removed, even more so after the series went mainstream with the 2006 anime, that they obviously voiced before the VN re-release
Ayako Kawasumi, Kana Ueda and Noriko Shi-taya aren't eroge actors.
Mai Kadowaki (aka Anzu Mitsu) has done ero games, but Illya didn't have any scenes so that's kinda a moot issue
They tent to localize a lot of the nuance of the writing. having played the tsukihime remaster even though i loved many things bothered me like translating akiha's "nii-san" as shiio or "Senpai" as Ciel (second one kinda affect the story).
Other stuff to how they handle the fact that are 2 character named shiki but technically written differently.
As for the lewd stuff is a big meh the ps2 version did that but added so much in return voice action and new fight cgs.
Honestly it would be great if someone make a patch to user the fan translation instead of the whatever comes out with this
The original Japanese builds, obviously not ideal to a non Japanese speaker would require you to use locale emulator to run a Japanese exe file on a western OS build, so you got that hurdle to overcome for people not in the know.
The actual fan translation builds, like the ultimate edition have community pages dedicated to them, so I wouldn't call them dodgy
but nonetheless, yes it's way easier, convenient and straight forward for people just to play the steam version and supporting the actual developers is great too
I bought this game countless times, I own all the physical pc and ps2 versions, so may as well add this to the list

Japanese PC games will have Japanese characters, your western OS can't read them so it creates unicode like garbage icons for the file names so you need a program called locale emulator to run them on a western OS. It tricks the exe file into thinking the correct language versions are being used. I have hundreds of raw Japanese visual novels so this is just second nature to me
As for game emulators, the emulators aren't the issue, it's the actual roms
though im pretty sure nintendo is trying to shut down certain emulators too so they must think the emulators are the issue
