I think thief3 is also fun, you can do more like action-game protagonist, in other words it may hurt the reputation of stealth-game.
(Thief 4 is good game. maybe short, but ending let me down.)
Thief 3 could have been a lot better with more polish, it's on the buggy side when it comes to arrows and such.
Thief 2 is very close though and many count it as their favorite. My problem with it is a few rather empty and overly long levels + not much variety making you feel fatigued after playing a while. I also think the opening level is a poor introduction to the game (second level is great though). But make no mistake, some levels are brilliant and the game is overall a absolute masterpiece. The mystery angle to the story is also great.
But if you are completely new to the classic thief games then I recommend you start by playing at least the first few levels of Thief 1. The combination of 'A keepers Training' and 'Lord Bafford's Manor' is a perfect introduction to the series and a very strong opening compared to any game really.
Note: Thief 1 and 2 are very similar games in terms of gameplay and graphics. So if you like one you will most likely like the other. They feel like two parts of a whole but still manages to have their own story style and atmosphere. They are amazing.
