I have played all FF III versions, even the NES version. The NES version is harder than 3D remake in DS, than 3D remake PSP or Steam version, than 2D Pixel Remaster.
* The 3D version adds some characterization and backstory around your party, while the 2D version keeps them a blank slate like the NES game was.
* The 3D version changes around when some jobs become available, getting the ultimate jobs sooner than the 2D / NES games.
* The 2D pixel remaster has a lot of quality of life improvements. Mainly, this involves a minimap being available everywhere, the ability to run, and the ability to quicksave anywhere.
* Both versions have rebalanced or altered jobs compared to the NES, generally to make some lesser-used jobs more attractive, or to prevent some previously overpowered jobs from rendering many other jobs obsolete.
* If you care about playing through the series as a whole, the pixel remaster version will do all of the NES and SNES entries (they have FF 1-4 done so far). The 3D remakes were only for 3 and 4.
* Which one looks better comes down to what aesthetics you like best.
