Onion Knight has really slow growth until like Lv91 or something IIRC. Wait until you're in the 90s in level but also make sure you have 9999 HP first or close enough that you can still reach 9999 HP

Never.

Don’t switch to onion knight until your max level

you can always grind job levels in starting location (outside Ur). This way you can get high stats of lvl99 onion knight without raising character levels. just do 5x defend on all characters then kill enemies. 6 turns battles, guaranteed job level up with every encounter.

Onion knight will still be useless until you get to almost max character level.

The stats are dependent on character level, not job level.

Here’s a comprehensive guide to how stats work [www.gamesradar.com]

Stat growth is based on character level, not job level. Pretty sure that Onion Knight is no exception. If so, the powerlevel trick for jobs won't work here.

Also, guarding 5 times per battle is only sufficient on the first 15 levels of any given job. After that, JP growth slows. Depending on which job it is, you may need to guard anywhere between 6-10 times to get the necessary JP to level up.
