That would often be a result of a mis-hit ive found, it will often be followed by commentary suggesting something was off about the swing or contact.
Every athlete in the game now has a natural fade or draw bias in their swing so the ball will always naturally want to go one way or another with most players now so often you will need to adjust the face to hit more squarely on the ball if you want it straight up and down, if you do not make the adjustment and exaggerate the natural tendency of the athlete by increasing that fade or draw and then do not get the perfect contact with the ball it will often shoot off right or left of where you were intending to aim... its super sensitive to your stick movements now, any distance away from perfection will open or close the face of the club at contact.
I know exactly what you are complaining about though, sometimes when you feel like everything has gone right with the shot the ball can just take a straight diagonal path to the moon but there is reason for it, just need to practice and figure out what adjustments you need to make before taking the shot so the face is as dead on as you can get it.
maybe it is the ball-probably playing with a cheap 2 piece ball like a noodle.. theyll probably have you buying 3 piece softer balls with vc to get a better strike sound..
