I'm also having a hard time managing the power cells. Docking several times in every system just to finish a job then buy power cells is getting incredibly tedious.

I'd advise you to sell that promptly before it becomes an issue. Alcohol isn't permitted to be brought into all sectors, and you could be fined if you're caught with it in the wrong place.
The dev team is aware of this issue, and re-balancing of the cost of power cells is planned for the first update. In the meantime, here's two things you can do:
1) Read and follow this very helpful guide: https://steamcommunity.com/sharedfiles/filedetails/?id=3326038605
2) When viewing the map of the galaxy, you can click on sectors and open a drop-down box on the left of the screen that shows the current prices for various types of goods in that sector. One of them is "energy". Sectors with lower energy prices will have cheaper full power cells to buy. Sectors with higher energy prices are good places to sell the empties.
