A flight yoke or hotas would probably be the better choice

Gas forward, brake well brake... Paddle shifters could nose up and down, wheel left right, direction arrows lateral thrust... Hell you could even set the shifter to related thrust preset ; First is 10%, second is 20% etc...

It could be done.

I wouldn't count on wheel support. HOTAS yes, BUTTTTTT
there are some neat little software goodies out there that will actually make this happen for you.
I used it for using my HOTAS (the throttle section) on TRAIN SIM WORLD. it translates key input to your supported device. you need to set it manually though, with some coding so can be a pain in the behind. but when you "get " it. it works great!

Get and learn how to use x360ce program, it turns any types of controllers into Xbox 360 controllers which the game recognizes. Then map inputs to the correct buttons and sticks and you're good to go.

I did this with my HOTAS.
