Is there some kind of Cruise Control / Speed lock-in?
Like, something tells me that holding the right trigger for hours of travel is going to get real uncomfortable...

Is there a button I can press to lock in the ideal speed I want to maintain? Or a gauge I can set, a La Elite Dangerous?

(Definitely need to restart the demo, I went "off road" to go to the first station, which led to my ship getting completely beaten up, and then I collided with a truck while trying to dock. XD)

Edit: After several missions I've discovered that the space truck maintains speed well enough that you don't need to floor it nonstop to maintain a decent speed. This is fine. :)

Yep, sort of. If you look down while sitting, there is a pyramid shaped button with "DA" written on it. That will disable the thrusters and therefore you won't slow down anymore. :)

The button I pressed that got me into an accident with a space station. THAT button.

Well, good to know, the fact I need to slap that real quick may mean I switch to mouse and keyboard lol.

Yeah, the Drive Assist is a mixed bag. It stops the automated gradual braking so you'll maintain speed, but it also stops it for the attitude controls as well, so you have to manually "counter" each direction adjustment you make to stop yourself just continually turning/pitching/rolling.

It makes an okay cruise control if you have a straight stretch of highway and don't try to maneuver (or do it VERY carefully). Pop it back on when you make course corrections, then off again while you goose back up to speed if you slowed more than you wanted.

If it still exists in the full release, it may be worth practicing steering with it turned off since it can result in less fuel burned if you aren't continually overcorrecting. Small savings but it might add up over time in full game.
