the red one or the blue one?

First move he does is always the submerged fin charge, if you're playing melee you can start off with a parry when he gets close and easily get some damage in.
Afterwards, his next move is always a close ranged attack, if someone else is taking agro you can easily get behind it and smash it up.
Break him with as many heavy attacks as you can, it should be easy to break him the first time. By now you've probably dealt at least one bar of hp which means he'll go into his wipe mechanic, just do the mechanic and beat him up and if you're playing your character correctly you should get another break the moment he stops flailing, giving you another big damage opportunity.
The safest place to be when fighting him is directly behind him, he's got no moves to hit you from there.
Be patient and practice dodging, take your time learning how to avoid getting hit, take a healer since he only has that one wipe mechanic if you're struggling to stay alive.

Once you know how to counterattack and dodge after learning the attack patterns, you can survive much longer.

When the shark throws the bombs, make sure you stay behind a bomb so that the shark eats it and gets stunned. This also allows you to survive the bomb explosions since you'll have a safe spot.

When the shark creates a whirlpool, just keep moving away from the blue rings which telegraph the water attacks. The second time the shark attacks, also make sure to constantly be running around since the shark will be attacking in between water spouts too.

When the shark submerges and the music stops, the best way to survive is to counterattack one second after the red circle appears for the shark resurfacing.

Also if you feel uncomfortable with some of the other attack patterns, feel free to switch characters (mid battle) so you don't have to dodge with the current one.

Playing as the tank usually is the safest way to deal with the hard hitting attacks of SHARK, since Roku Saigo's block provides a lot of damage mitigation. Enemies hitting the block also fully charge his secondary attack, so it works as a decent way to immediately follow up with a secondary. Just know that his attacks are very slow, leaving little room to avoiding attacks while he's spinning around.

When he's at low health, I recommend switching back to a damage dealer while a healer helps patch up Roku, especially since he's busy collecting most of the bosses' aggro anyways.

When the shark submerges and the music stops, the best way to survive is to counterattack one second after the warning signal appears when the shark is about to resurface.

The water beam attack you can just dodge through, just in case you're struggling with that.

Also if you feel uncomfortable with some of the other attack patterns, feel free to switch characters (mid battle) so you don't have to dodge with the current one.

My bad for the spam. I can't seem to edit my first comment.
Just killed the thing perfectly right now with my Nagito before I seen this thread xd.

It might seem cheesy or maybe it was already said but whenever he's out of sight (underwater or in the big typhon) I jsut start spamming right click/shift to dodge, it works weirdly well, the rest is just pattern learning

I don't know what character you have atm but I think the safest thing to do against it is to bring a taunter like Saigo, a healer and just stay behind it with the DPS just like peoples above me said. Then equip a defensive potchimon for all characters.

The taunter will probably take all the aggro except the half rotating water shot (you can just circle him if you're not confident to dodge it), the AoE bombs drop (countered by parrying when its lunging after the roaring stance/stay behind the bomb), the tornado AoE (can just keep moving and circling the area without dashing while avoiding the ring of water like what i did in my vid) and the submerging part (the only thing tips i can give you here is parry when the "WARNING" siren sfx stop playing/when you see a puddle).

That's how I cleared the red shark for the first time atleast.
