One of Yakuza's strongest points are the story and characters, and they will grow on you as you play more and more games. There are also many cameos and substories involving characters from previous iterations throughtout the whole franchise.
Yakuza 0 is the first in chronogical order story-wise, so I recommend starting there (it's also my favourite Yakuza game).
And strcitly about Gaiden, it is very tightly connected to Like a Dragon, so not playing that one first, you won't get half of what's happening.
My recommendation: if you like Y0, try playing all the other games in order (maybe skip Y3, it's a bit dated and tedious, but watch a Youtube cutsecene video) and leave Gaiden for last.
It bridges a gap between other important events and you are put in the shoes of a character who has 7 mainline games worth of backstory behind them by the time this game takes place. This game answers the question of "where has Kiryu been?" without really progressing the overarching plot of the main story very far, so it is strongly recommended that you go into this game already invested in the character.
As a lot of prequels are intended to be, Yakuza 0 is an excellent starting point. You are playing Kiryu (and Majima) from the earliest point of their story.
Exploration-wise their is no doubt about it. This game has Sotenbori and the Castle of which the latter isn't really that big. Yakuza 0 has Sotenbori AND Kamurocho, the latter being the original location of the Yakuza games and has been featured as a main location in nearly all of the games including the Judgement spin-offs. Not only does Y0 have two main locations of decent size, these locations also seem to be more worked into in terms of the density of diversions on offer. Out of all the games that I have played so far Y0 still feels like the most complete package.
