I realize it's not all that helpful, but protecting your Doctors (either by keeping them away from danger in battle, or not bringing them into a fight in the first place) is generally a very effective way to avoid this kind of situation.
If not, make sure you're ready for anything. In this case, maybe you could have won that ambush by having enough consumables in stock. Spike traps and Lanterns can decimate enemy ranks surprisingly quickly.
For what it's worth, in your situation it would've been better to focus on healing one of the doctors fully. Followers don't necessarily get worse if left untreated, it's a probability check, so you might have been lucky and your second doctor would've survived until the first was back in action. Otherwise, losing one doctor is still better than potentially losing a whole handful of characters. You can pick up a shaman in Mexico through one of the side quests, he can treat injured followers too.
My main character is able to heal, and i have two doctors. About leaving the other followers untreated to get a doctor back to health, id have to sacrifice at least 2 followers plus one of the doctors.
I guess ill have to load an earlier save, bite down, and sacrifice some followers.
