But to answer your questions: this is pretty much how things work with my group, currently (and exactly what I designed this for). One of my players moved away, and I as the DM wanted to replicate the way we play in-person, which was just throw down a map and minis/tokens and play. We usually have 3 people playing in the same room, and 1 online, joining the game remotely and with voice via Discord.
(side note: highly recommend a conference call microphone/speaker for the people who are in the same room together; it picks up everyone in the room and the people playing remotely don't get an echo, it's great)
We also use Beyond for keeping track of character sheets, and I tend to use Notion for notes and tracking everything else.
