Don't believe the same thing is true of a personal union - they will occupy the province the same way a non-vassal ALLY does, but I could be wrong, I've only had one PU
The determining factor is whoever gets to the province first and sets up the siege, as long as they don't leave it, they have control (if your forces are mixed, look at the siege, you have control if you can order the assault)
-Every territory where I started the siege and left people there, regardless of whether people join the siege, shows as being mine. Yup, so far so good.
-At a most recent multinational war, enemy Poland was adjacent to my PU but not me so I kinda neglected the theater of war there. The PU partner being Austra runs around and stomps Poland in the face... and yields 8 territories, 2 to Austria, 6 to me -- despite me not being there at all. This confuses me.

In case of your Austria vs Poland game, you probably had a unit siege one of the territories and Austria snowballed it from there
They actually do know that tactic but will only employ it once the enemy armies have been destroyed. They of course won't do it as efficiently as a human can but they still do it.
Any siege won by a vassal will show up as yours unless the vassal has a core on it in which case it becomes occupied by the vassal even if you have occupied territory next to it.
Sieges won by a PU lesser member will show up as theirs if you do not have any territory neighbouring it. Presumably they also get their cores as to the rule for vassals but I'm not sure about this. Otherwise whenever it neighbours territory occupied by you or owned by you it will be occupied by you.
