"1024MB graphics memory required " if you didn't read the requirements you only have yourself to blame.
If anyone has any tips on configuration settings for faster gameplay for those of us on older hardwear - I am sure you'd find a welcoming audience.

Try disabling anti-aliasing, which is most likely to be a huge consumer of vram. If you're running a 27" iMac you probably run at 1440p, which itself will eat vram... you might consider trying 1080p in that case (if it's something visually acceptable).
I glanced at the graphics options in the demo but don't really remember what all was there. In addition to AA, I would just turn everything to minimum and see how it runs. If it's okay, then start ticking things up as far as performance allows.
