As for annexing larger countries like Aragon, yes you need to break them piece by piece, especialy wealthier nations. You wouldent want to to take a whole large country in one go anyway as you will become rife with rebels :)

Also they have a 5year truce at the beginning of the game.
So just declare war after 5years, occupy the 3provinces and then you can fully annex them with 100% warscore (if they have allies in the war either occupy the allies too or just wait 5years, then you will have automatically 100%WS.
It has always been 10 years, 50 years is only for PUs =)

Annexation of a vassal requires you to have kept them vassal for 10 years, be at peace and have your vassal have 190+ opinion of you. After that you'll use diplomatic power at a rate of your overall diplomatic reputation+1 (and +1 for each of the following: Same culture group, same religion, which for Granada wont play a role)
If you started at the earliest starting date, Granada is not your vassal, their provinces are just your cores and you can declare war for them as soon as your truce ends (or by breaking truce though it will cripple your nation).
You can select a province of your enemy (ie Aragon) and you'll see some crossed swords and a %. If you hover your mouse over that icon, it'll pop up and show "total cost of the nations provinces".
You can only annex or vassalize if that number is 100% or below (well slightly above 100% if you got a claim on a province and declares for it iirc). Anything higher will require you to eat it piece by piece.
It has never been 50, it was always 10 years and +190 standing to start annexation. For personal unions it's 50 years and +190 standing.
OP, you can see when the vassal treaty was entered by going to the diplo screen and hovering the mouse over the "vassal of" symbol (crown with a blue shield in front of it) in Granadas ledger.
Shoki, he said it was already a vassal so he doesnt need to war them ;)
Issue here is he said it was his vassal by default. I don't know if they start vassals in later starts, but they surely aren't vassals by default in 1444, so there's two options (one which you covered and one which Shoki covered(in case OP was wrong due to his 'newbieness'(mean no disrespect by this <3))). =)

http://i.imgur.com/CG2TYZm.jpg< Granada has been vassal with me for nearly 40 years now. Based on the description, I have to get my assimilation to 100% before i could annex my vassel. I think it gains 10% every 10ish years or so by itself since im at 20% now.
And, I'd like to know what are the other ways to obtain casus bellis other than fabricate claim? I'm planning on taking Portugal now. I wanna actually taking it instead of vassal it. Not willing to end up like Aragon.:/
1) You can only press the full annexation button when you have 100% Warscore (and the province cost are less than 100% ofc). In your first screen you only have 18%warscore. Dunno how it is in MEIOU, but in the vanilla game you either have to occupy all allies in the war to get 100% or wait 5years with the war leader completly occupied.
2) The Granada vassal message doesn't exist in the vanilla game, so better ask the MEIOU team here. It seems to be a special system of MEIOU. In the vanilla game you have to wait 10years after vassalization and have an opinion of 190 and positive diplomatic reputation. But this doesn't seem to be the case in this mod.

3) There are several ways to get CB. The most used ones are the exploration Idea CB against nations in the new world, the expansion Idea CB against asian nations and the religious Idea CB against nations of another religion. At tech lvl 22 you also get an imperialism CB against everyone.
However i don't know if this is like that in the MEIOU mod too.
