How to become Papal Controller and kick ass
So how do i become the Papal Controller in 1510 and stay Papal Controller, and how likely are Catholic AI to accept calls to Crusades against the Ottomans. Also, would Protestant nations care or be willing to respond to Crusades against the Ottomans? Would being the Papal Controller improve your relations within the HRE even though you're outside it (eg: calm down aggression) or are the Papacy and the HRE two seperate things? (I want to be the Papal Controller as Hungary btw).

To become papal controller, you must have at least one cardinal and then invest papal influence to increase your chance of becoming it when the current pope dies. in other words, you can never be certain that you will remain in control of the curia. as for crusades, all calling one does is grant special bonuses to catholic nation fighting that nation; it does not affect protestants. Lastly, the curia does not affect the HRE, although i think it does give you a dip rep bonus wouch would help you if your goal is emperor. It also gives a modifer decrease aggressive expansion.

Cardinals you will get randomly. In the Papacy view screen you can see how much papal influence you've got and at what rate you gain it yearly. And there should be a button just above the cardinals which allows you to invest Papal influence.
Keep in mind that at the start you need to invest at least 10 papal influence, and the amount you need to invest increases by 5 each time, so it goes from 10-15-20-25 and so on.
