Missionaries in Kongo
I started playing as Kongo on Ironman mode and got an event about the Portuguese missionaries. I accepted them, which converted one of my provinces to Catholic. I left it be, hoping that the follow up event would soon fire, allowing me to change the religion but some time later I noticed that the Catholic province converted itself back to Shamanist.

Is this a bug? And more importantly, should I restart the game, or is the event with my ruler converting to Catholicism still possible after that?

This will happen if the event occured in a province with a colonist that is not yet done, The religion in a colony always converts to your main religion upon completition. I have had this happen to me twice in my African Power tries. The first time, it was fail requiring a restart. The second time (Fernando Po), I pulled my colonist, withdrew my protecting troops and had just enough native revolts (only 500 natives there) such that the colonist finished AFTER I got the Carholic event.

It does require a restart. African Power can only be done if Kongo is Catholic. The second event can only happen if at least 1 ptovince is already Catholic.

Additional hint - Turn off Wealth of Nations DLC. Thay way, you can westernize in the Gold Coast since there will be no Trade Companies without WoN.

panther, your colony doesn't change religion nor culture unless you have an active colonist there. When he is gone any religion change will be permanent until it's a city, at which point you can freely convert it or let it be just like any other.

So you are saying a colony that completes without a colonist present will NOT change religion?

I must say I never tested this, but I do know that the religion will change upon completion for sure when a colonist is present, unless this has been changed in a patch.

Yes.

Also, if you conquer, for example a Castilian colony and leave it until it finishes without sending your colonist it will keep castilian culture and catholic

I don't think that's correct. In my african power run the event said it'll change the religion of one of my colonies to catholic (wasn't finished), but it was my state religion after completion. Nevertheless i continued this run. Was a bit more troublesome (because the government change event of portugal didn't happen), but more entertaining too.

Is there a province on the Coast of Africa, where Portugal wouldn't be able to create a trade company? Like somewhere close to Jolof maybe? Or are they going to start it as soon as the move south of Safi trade node? Also, can I westernise across the sea, if Portugal has an island in the same sea zone as my coastal province?

You pretty much have to westernize in Brazil if you are running WoN. I found in my many attempts for African Power that the delay for this can be too great, especially if both Castile and Portugal do not settle Brazil right away.

I really feel that I recently got the achievement only because I turned off WoN for it. The other reaon for turning it off it that the Europeans have much less desire to settle Africa instead of the new world, so they tend to take fewer provinces in Africa (especially the rich South Africa Trade Company which is 100% colonial provinces).

With WoN, the Europeans will heavily settle the African coast far sooner to increase the power of their Trade Company. Portugal or Castille will eventually take an inland province in the Gold Coast for you to westernize, but this will be such a long wait such that Brazil is typically way faster. Also, Portugal (and frequently Castille too) will usually make their first colony in the Gold Coast and form the Trade Colony immediately.

If you stay Shaminist, there is still a tough path to victory by becomming a protectorate of Portugal or Castille until you westernize. This makes it much harder for England or France to kill you early in the game. The huge problem is that you lose the free government reform and therefore have to complete one of the three required admin idea groups before westernization.

You can also take a province from one of the Europeans and westernize that way (doesn't matter whether or not it's trade company territory for this). Requires a good opportunity of course, but it's another thing to look out for.

Religion and culture dont change in a colony if you dont send your own colonist
