You can use the ruler designer to start with that religion, but the mechanics for it are extremely bare-bones.

G. get hellenistic concubine
H. Convert back to hellenism

Is that correct?
Concubines are a very complicated way of converting though, especially considering that Orthodox people can't have concubines.
Easiest way to convert is to have your heir be educated by someone of the religion you want. So if you're Hellenistic and have the territories you need have a random Orthodox courtier or vassal educate your heir, reform the Empire once he takes over, hope that your new Empire won't implode in civil war because your ruler has a different religion from everyone else, and then have your next character be educated Hellenistic again.
Edit: Since you can't play Ironman when using the ruler designer anyways you might as well use the console instead of double converting though.
