It's played in real-time so it is not turn-based like Risk, and there are hundreds of "players" or nations making their moves at the same time. It is less of a game with strict rules and winning conditions than it is a simulator of that time period. It's very different to Total War series or Civ.
I recommend checking some youtube vids for gameplay
First of all the game isn't turn based at all but you can easily control time, give any orders and let it continue so you can enjoy the calm of a TBS kind of game. It isn't as fast paced as a Total War or any kind of real time game and you can take all the time you want to give orders.
The battle system features a lot of variables like terrain or troops' experience that affect the outcome of the fights so numbers are not as important as they would be in a Risk game.
A part from the combat and conquest there's also politics and economics that add flavour to the game and make the game quite more enjoyable.
I would say this game is more or less like Risk but quite more depht and complex, anyways it's really easy to understand the basic mechanics and you will learn quite fast, also there're a LOT of guides with recommended countries for starters and nice tips to begin your first playthrough with.
Risk is mostly a dudes on a map board game with lots of conquest. This game does not encourage mindless attacking. It's a fantastic game and you should consider it but do not buy it thinking you're getting a digital Risk game.
Its not really online as well, unless you count multiplayer as that.
But if you liked Risk and A&A then this game is one to get, ASAP! :P
It's grand strategy, this means you'll not see and control the actual armies, instead you'll mind about their position, leaders and development of course (discipline, tactics, tech etc.). You'll also think about diplomacy, administration and expansion of your country, having, if you're an important country of that period, several bonuses to empathize its traditions and a different approach based on your starting position and neighbours. Anyways you can play the demo and see how it feels.

The only thing it has in common with risk is it uses the map of the world. That is it.
Tech speaking this is a turn based game... every "day" is a turn. They just go by a lot faster then games like civ 6
