Can I remove Estates and if so how?
My empire has extended into France and I want to get control of Gwenydd and give the church land in France, how can I do this.

click a province expand the building menu there and there it is

but note that unless your a horde estates can get quite unhappy. you can balance it out though and try to keep them on a min. controlled provinces to be able to handle them better

Yes I keep them happy, I'm giving the church land in English-France. Is there a time limit, like CK2 where you have to wait before you revoke a title.

if you granted a land you cant revoke it for 1 year

Certain land is better to be given to certain Estates, like giving the Nobility a province that produces Grain will give even more manpower that just a owned province that produces grain.

Also worth noting that giving all your trade centers and estuaries to the merchants is highly important!
If you mouse over the button to remove the estate then youll see the effect it will have on loyalty and influence if you remove it

One correction I would make.

If you are a horde, tribes are designed to become unhappy and throw you into a 50% tech and idea cost disaster that can repeat. The wiki actually says it this way now. I had to figure it out for myself in that basically growing and trying to keep them happy will always eventually result in them having too much influence and taking pretty much all their land away making them very unhappy becomes the only solution.

So when playing hordes I've found it's simplest to take all their land away early on and forgo the bonuses and handle the minus tribe unity with razing.

The idea with tribes apparently is to push you to reform so they go away. However razing solves all things and is too good to give up. In exchange for the occasional tribe revolts you easily stay ahead of western tech all game with more monarch points than you can spend.

thats a good tip if you dont feel confortable with the estates yet.
i never had a single revolt from them and kept them in check with minor boni from them (ofc i didn't ask for support after a certain gamepoint)
