Some changes are easy, just one click (e.g. Catholic->Reformed), some changes require some work and others may be very hard or even impossible (Inti->Jewish) depending on your skills, your nation and the game situation.
Which religion are you and to which religion do you want to change?
1. Take a province which has the religion you want.
2. Put in a missionary in the province and set the missionary maintenance slider to zero. This prevents actual conversion.
3. Check the rebel type after a few months. Sometimes, it can be difficult to get a religious revolt instead of a nationalist revolt and it may take a few tries.
4. Park your army as far away as possible, such as in an allies territory.
5. Let the revolt spread to as many provinces as possible.
6. Eventually, the revolt will automatically enforce demands, setting all occupied provinces to the new religion.
7. Repeat steps 2-6. This second time the rebels win, your religion will change as long as more than 50% of your provinces have the new religion.
This is how to get this achievement:

While this is true, doing the 2 step process means that the rebels will convert a lot more land for you.
Having said this, I must admit that I did the 1 step process for Sindh (my screenshot) since I quit the run upon getting the achievement and did not care how much extra land was converted.
It was a bit ago, and I actually cannot recall if the threshold is 50% provinces converted or 50% development converted. All I did was dance with the rebels until the enforced revolt included the religion change.

Many religions let you change to a different branch of the same religious group (catholic->protestant) with the top-left button in the religion screen.
