What version is the game today?

I noticed an update and I am deep into a campaign which I do not want to lose achievements on.

I assume today's update breaks older saves.

Today's update is version 1.37.5. The only change in that version is that it integrated the following DLCs into the base game:

• Art of War
  
• Common Sense
  
• Rights of Man
  
• “Digital Extreme Upgrade pack” which consists of the minor DLCs:
  
  • “100 Years War Unit Pack”
    
  • American Dream
    
  • “Conquest of Constantinople Music Pack”
    
  • “Horsemen of the Crescent Unit Pack”
    
  • Purple Phoenix
    
  • Star and Crescent

If you had them already, your save should be compatible, but I would still recommend that you create an additional backup and store it in a save place.

But you can just return to 1.37.4 in the betas list in the eu4 properties in the steam library.

Because I don't see them anywhere

As far as i understood it, the DLCs are "gone", as they are hard included in the base game now.

They are in the builtin_dlc folder of the game installation. But they are shown neither ingame nor in the launcher. If you want to know that they are working, you can check some of their features. E.g. in the court tab you have abdicate and disinherit buttons if Rights of Man is working and national focus buttons if common sense is working and you can check Art of War by looking at the fleet window to see if you can mothball and upgrade ships
