What do I miss out on if I buy the bundle in this steam autumn sale?
Do I miss out on any DLCs?

Which bundle? The ultimate bundle contains all DLCs which have a gameplay impact, but it is missing many of the music and unit model DLCs

The 'Buy Europa Universalis IV: Ultimate Bundle BUNDLE'

The ultimate bundle contains all DLC, minus a few cosmetic or misc packs (Such as history lessons, or unit models)

That is to say, it contains all DLC that has "gameplay content"
