How to avoid the Danzig rebellion?
I was trying to play with the Teutonic order and I got a rebellion that I don't understand where it comes from, why I had it and how to prevent it

As always, check the wiki before you start a campaign:

The Prussian Confederation is a Disaster that fires shortly after the start. The Disaster details disloyal estates that have secured Polish support for their cause against the Teutonic Order who will revolt as Danzig and, if the player elects to go to war against them invite Poland as a supporter of their Independence who will always accept. If you have alliances at this point, you will not be able to call them to arms as you will be labelled as the attacker.

It is therefore, not wise or suggested to allow the situation to spiral down to this. The only other way to resolve this is by being at peace, having at least +1 Stability, no spawned Particularist Rebel armies who must not occupy any of your territories, as well as having 40% Crownland, to complete the decision Curtail the Prussian Confederation.

I'm very serious about checking every nation before playing it unless you want to have surprises for roleplaying or realism reasons.

Having 40% crownland and +1 stability isn't hard at all. Seize land twice, increase stability once, done.

What Marquoz said, but with a few extra hints, you need to seize crownland twice before 1450 even if it spawns rebels. do not take any modifier that reduces crownland, avoid guaranteeing Swedish independence. I usually focus on two things, ally LO and immediately begin to improve relations, improve relations with Austria to get the join the HRE event to fire, avoid taking an alliance with any Austrian rivals, and lastly, use insults of Austrian rivals to move relations along faster. If you get the HRE event and are able to vasal LO, you really don't need any allies initially. Bohemia usually will ally you, but if you ally them early, Austria often rivals them making getting the 100 diplo relationship with Austria that much harder. I usually wait until I am in the HRE to ally Bohemia.
