Malaya is usually pretty fun to form/play
Forming Greece with Achea with frontiers that goes from the balkans to Anatolia (with Theodoros & Trebizond as vassals).
Forming Westphalia with Aachen with frontiers from the south of France to the eastern part of Germany (with Switzerland as a vassal).
Re-forming the Roman empire with Byzantium with the best frontiers the Ottomans & Rome had at their best.
Re-forming the Yuan dynasty with Mongolia with modern China frontiers I tried to recreate the best I could.
Forming Devlet-i-Rûm with the Ottomans.
What I'm searching for is not only something fun to do but also challenges of sorts that won't end with something everybody does anyway (like what I said above).
The only idea that comes to mind is invading Spain & Portugal as the Incas or Aztecs and even then, I feel I could do better than that.
You can look at achievements for inspiration.
Another possibility are mods. I recommend Anbennar.
