What is the ideal inland sea navy composition?
Should I simply have galleys, or should I mix in some of my big ships too? If so, what ratio works best?

-Thanks!

Heavy ships always beat galleys, ship against ship, even in inland seas. Keep as many heavy ships as you can afford and fill the rest of your force limit with galleys. However, if you don't have any real naval rivals, it can be more cost effective to just flood the seas with galleys.

The maintenance difference between galleys and heavy ships is huge! Naval_Ideas.Combat_Ram will give your galleys a combat boost.

Even in inland seas, heavies are stronger. However, they cost drastically more, so it is usually more cost effective to build 3 galleys or whatever you can build with the same amount of money as a heavy ship if you're only planning on fighting in inland seas.
