It may be easier to answer if you provided more information. What year is it? So, you are Castile? Which AI countries have declared war on you? Have you made allies yourself? Did you improve relations with other countries? Have you conquered much land lately and coalition formed against you?

If I had to guess, they see you as a threat. The most you can do is A. Improve relations (not a good idea most of the time), or B. Ally countries who can help you out (not sure who starts out friendly to Castile because i've never really wanted to play them).

Usually, getting declared upon even once is a sign of something going wrong on the diplomatic front. Either you triggered a coalition and/or you have too few powerful allies and look like a good victim.

Always have multiple allies. Ideally big guys that rival the same nations you do but that are just far enough away to not call you into their offensive wars all the time.

As Castille, almost any two of the bigger european powers will do. France, Austria, Bohemia, Poland are preferable, but England, Denmark or a few medium sized guys like Brandenburg, Saxony, Papal State, Milan and so on are allright. If you can get the Russians, Mamluks or Ottomans, all the better, but they are more difficult to convince.

Always use your diplomats to improve relations with anyone you are not mortal enemies with. Most nations should love you. If they do not, you did something dangerously wrong - likely conquered too much too fast nearby and did not use your diplomats to smooth things over.

Playing aggressively in Europe, it is hard to completely avoid coalitions, but knowing when and how they form, having a defensive alliance cushion to prevent them from attacking and knowing how to handle them is needed to play that way successfully. As a beginner, I would suggest making sure coalitions do not even form, which means keeping the aggressive expansion modifier with third parties below 50 and/or relations with all of them above 0.
