- Tech makes a huge difference, esp. in the early wars
- Stars are an indicator how good a general is, but you need to look at the actual pips: Early game, a *** general wih fire 5 shock 0 maneuver 5 siege 4 will loose vs. a puny *-general with just shock 3. Reason is units have no fire pips early game, siege is only important during siege and maneuver to get river crossings, speed and less attrition. All nice, but not important in actual battle.
- They might have janissary special units which get reduced damage and faster drilling on top of all those benefits
That said, venice is in a great position to cut ottomans down to size due to naval superiority. Trap their siege armies on some island and suddenly you only need to deal with half the army (just remember to keep a ship there and siege the other part so he cannot cross back after the siege finishes). But its a hard fight

Notice the distinct lack of Ottomans.
How did I beat them? On day 1, I allied Austria and Poland. Then I fabricated a claim on Byzantium and vassalized them. After I built up favors with my allies, I attacked the Ottomans using the Byzantine reconquest CB. A few wars later, I force vassalized the remnant of the Ottomans and used their reconquest CB on the Mamluks, who had taken most of what is now eastern Turkey.
Final result: no Ottomans.
1) Use terrain well. Defend on hills, mountains, or forest. Attack in plains. Force the Ottomans to cross rivers to get to you. Don't cross rivers to get to them.
2) Use the right generals. You already covered this.
3) Swamp them with more enemy armies than they can handle even with their advantages. This is why I allied both Austria and Poland in my Venice to Italy run.
Combine these 3 tips, and they go down in flames.
This - you can make up for being behind in tech by making sure the enemy gets a terrain penalty in battles.
And also 4) Attacking an enemy who is sieging your castle - I once defeated stacks and stacks of European powers attacking me in Ayutthaya by only attacking sieging fores on mountain squares. I had Austria, Sweden, Bohemia, Poland France and Britain all sending stacks of 40k+ troops to attack me and I was way behind in MIL tech.
