Is there a demo on steam?
I don't know if I didn't look hard enough but I'd really like to try a demo before I buy, but I can't seem to find one (if there is one) if there is can someone please try to navigate me to it, thanks.

Yes. It should be on the store page. Maybe it is only active during a sale. It should be the first purchase option.

On the store page should be item called "Download Europa Universalis IV Demo" with download button.

I know this doesn't exactly answer your question but I would recommend watching someone play on YouTube, that's what convinced me to buy one of my favourite games!
