I, personally, always choose a Center of Trade or at least an estuary (when there are more than one, the one I like most or the node's naming city) but that is just my personal preference.
In my current Aztec Game I moved my Trading Capital from Mexico to Cartagena (the CoT in Northern Colombia, near Panama) to the CoT on Hispaniola (can't remember the name). Hispaniola only won by personal preference against Havana on Cuba or Curacao or any other non-CoT Caribean province. Next one is probably Massachusettes.
The last time i did a Bran/Prussia game, i ended up getting Lubeck totally by accident so at that point it was a total no-brainer and i didnt even hesitate to move my trade capital there. (attacked someone else who had allied and called Lubeck to war right after my DoW allowing me to take lubeck from them in the seperate peace deal)
But, my current game, i literally cant do a thing as the game is doing anything it can to screw me over. First i was just getting ready to attack Pom, when just as i was waiting for my armies morale to go to max before i declared, Poland then warns me, shutting down that attampt at war instantly. then years later, when Poland was busy attacking the TO and would no longer get involved in my war, i once again got ready to attack Pom, and then they go and ally Denmark, once again shutting down my war attempt.
I then figure ok, ill just wait till im elected emperor and then destroy both of them after, since i currently am a shoe-in to be elected having 5 of the possible 7 votes but again, nope, as it is now 1490 and the 70+ year old emperor of Austria refuses to kick it. Which i find funny cuz 90% of time i play within the HRE and want to be emperor he always tends to live forever, but if i ever do a Castille or a Byzantium run or any other non-HRE game, he then usually croaks by 1460 at the latest.
Moving your trade capital in a province just determines where your trade goes into.
