Dithmarschen > Ireland - Peasant Republic of Ireland?
So here's a super random question but one that I'm really considering.

In preparation for a new 2-player save I'm planning to do with a friend, I wanted to try forming Ireland. However, it occurred to me that it's possible to play as a non-Irish country, take parts of Ireland, change cultures so that I get the 'Form Ireland' decision available. My question is simple:

If I turn Dithmarschen into an Irish nation and successfully form Ireland, do I get to keep the PEASANT REPUBLIC government type? I'm intrigued by the idea of a Peasant Republic of Ireland, but I don't want to even bother if forming Ireland means I lose Dithmarschen's unique Peasant Republic government type.

No you won't, If you check the EU4 wiki for all of the formable nations you can see Ireland does not change your government type so you will remain a peasants republic. Do keep in mind that most formable nations, including Ireland will remove you from the HRE unless you're either an Elector or the Emperor
