Can I just turn the estates off
i find the estates mechanic mostly just inconvenient and didn't buy cossacks specifically because i didn't want it, i came back to this game after like a year of not, and its integrated into the base game, is there a way to play ironman without the estates?

For achievement purposes? Nope

Gotta roll back to patch before cossacks for that.

...you can also just entirely ignore them tho. They wont do much if you dont interact with them - only occasionally some events that might drop their loyalty below 40, nothing really bad.

As MrMonokel said, you can safely ignore all the Estate interactions. The limit of them poppoing disaster was raised to 100% and they do not require any land to be happy, so you are not forced to manage them at all.

You could also just take away all their lands - once they have no influcence, they no longer matter. Just need to kill the rebels

Often, estates will still have influence even with zero provinces.

A better solution is to learn to use them to get 150 monarch points from each estate once every 20 years. And manpower. And money. And colonial growth. And free heavy ships. And strong generals. And advisors. And even more...

If they go below 40%, all you lose is money or manpower growth until they get back above that. A pretty decent trade, is it not?

And, by putting them in the best provinces and developing them correctly, the 25% autonomy floor does not actually even cost you anything!

You can still play ironman with mods.
I am not aware of a mod that disables ironman on purpose.
But about the achievments...

I set ironman on the same level as getting achievements since thats more or less the sole purpose of it.

I like estates. It can be ignored but that´s not optimal gameplay. Besides it´s not like EU4 has a lot of stuff to do during peace.

Not really. I only play Ironman but set historically lucky nations off which disables achievements.

Just preference i only play iron man for achievements but theres no one way to play

Its better to learn how to game them for benefit as they are quite shallow when they aren't blowing up events in your face.

Some events are worth it, however. Also they are great for colonial nations.
