how to reveal the map (without cheats)?
do i have to explore every single ti province?
or there is an idea/mission for it?

Just wait. Discovery spread usually reveals it fully by late 1700s

You can ask other countries to share maps. You have to have positive relations on the higher side and I think it costs 10 Prestige. You can see how many provinces will be revealed before you accept.

This may possibly be a DLC feature, I can't remember.

It seems to be bugged for american nations (at least for Incas), I've completed a full game and haven't got a single discovery. Only provinces I see in 1821 in Europe, Asia and Africa are coastal (that I have explored myself) and capitals. I also see a couple provinces in the eastern Siberia, but that is probably due to me having colonies there.
I am having discoveries as usual while playing Old World nations.

You can also steal maps by building spy networks. This is a stepwise approach, and you need a unit, land or naval, adjacent to the region.

year is 1874 and i only have the extended timeline mod

You don't get that much auto-discovery in some cases. In my Aztecs game I only got coastal areas. The interior was all fog even past 1800.
